Calcium sorbate is also known as sorbic acid calcium salt, E203, a fine crystalline powder, which has good thermal stability, there is no change in the color of heated 90min, and it decomposes at about 400℃, used as a preservative in food. It is slightly soluble in water, almost insoluble in organic solvents such as ethanol.
