Isomalt is composed of α-D-Glucopyranosyl-1,6-D-sorbitol(GPS) and α-D-Glucopyranosyl-1,1-D-sorbitol(GPM) basically in a ratio of equal mol.

It is a white odorless crystal, sweet taste, sweetness is about 45%~65% of sucrose, slightly hygroscopic, melting range 145~150℃, specific spin ≥+91.5° (4% aqueous solution, M/V); soluble in water, its solubility in water is lower than sucrose at room temperature, it can be close to sucrose after warming up, insoluble in ethanol.
Because isomalt sugar alcohol possesses properties, it is suitable for products produced with common production equipment. It is a perfect sugar substitute because it has a pure taste like sucrose, no bad aftertaste and odor, synergistic effect with powerful sweeteners and can cover the bad aftertaste and odor of the latter, low hygroscopicity, high stability, low energy, non-caries, etc. At present, isomalt has been widely used in the production of various food products: hard candy fudge, chewing gum, chocolate, jelly, refreshing drinks, ice cream, baked products and pressed tablets, etc.
