Neotame is a white crystalline powder, containing about 4.5% of the water of crystallization, and is a functional sweetener. It has a pure sweetness, sweetness concordance, very close to aspartame, without the bitterness and metallic taste that other powerful sweeteners often carry. Sweetness is 7000-13000 times sweeter than sucrose and 30-60 times sweeter than aspartame. The energy value is almost zero. Can remain stable under the conditions of instant high-temperature, cake production, after 450 0C high-temperature baking, there is still 85% of New Sweet present.
Neotame has been approved for use by many regulatory agencies and countries around the world, including JECFA, and FDA, and is currently under review by many more regulatory agencies and countries around the world. Metabolic studies have shown that no special labeling of phenylalanine is required for neotame-added products.
